Casa da Oliveira Brava aged red wine vinegar is obtained from a selection of our best red wines aged in oak barrels with the knowledge and tradition of the Douro. Previously, vinegar was produced only by exposing alcoholic beverages to air without any knowledge or scientific basis of the process. It is made in wooden barrels and is based on ancestral production methods. It is a surface production method since the oxygen necessary for acetic bacteria is only available at the liquid-air interface. At this interface, bacteria produce a cellulose structure where they themselves are aggregated, usually called “mother of vinegar”. The production of vinegar using the Orléans method is a slow process, but it gives rise to high quality vinegars with high added value.
Vinegar is defined as a product obtained exclusively from a biological process of double fermentation: alcoholic and acetic. Fermentation takes place based on liquids or other substances of agricultural origin. As such, if the raw materials are not of agricultural origin, the product cannot be called vinegar. Vinegar is one of the oldest products in the world. Its origin is still unknown, possibly having emerged when agriculture began, in the Neolithic, through the discovery of alcoholic fermentation of fruits, cereals and vegetables. Since the era of Hippocrates, vinegar has been used as an antifungal and antibacterial agent to treat infections and diseases. In addition to medicinal purposes, other uses have been given to vinegar, such as its introduction into foods and drinks, as a food preservative and even applications in the home (e.g. cleaning surfaces).
